Mango Chicken or Achar chicken
I know there are many variations for mango chicken but this is the way which is easy and delicious and also authentically Indian flavoured.
1 kg boneless chicken cut into cubes
250gms tinned chopped tomatoes
1 large onion chopped
1 tbsp garlic and ginger paste
3 tbsps hot mango pickle (pataks )
salt to taste
1 tsp turmeric
1 tsp chili powder
2 tbsp ghee or clarified butter
1 tsp garam masala
take a mixing bowl and mix salt turmeric and the mango pickle well and mash the mango pieces. Now rub this mixture to the chicken thoroughly and marinate the chicken for 1 hour.
Heat the ghee in a wok and fry the chopped onions till golden and add the ginger garlic paste and fry for3 minutes. Now add the tomatoes and cook for 8 minutes till they are simmering into a gravy , now add the marinated chicken along with the marinade and cook slowly on low heat till the chicken is completely cooked , add the chili powder garam masala and cook for 5 more minutes mixing well.
serve hot with rice.
