Sweet Pumpkin curry
1/4 kg Pumpkin (Variety acc to taste)
1 large onion
1 tsp ginger paste
2 cloves garlic crushed
1 tsp Black mustard
1 tbsp chilli powder
1 tbsp tamarind paste
salt to taste
3 tbsp grated jaggery or 2 level tbsp sugar
3 tbsp oil
Cut the pumpkin with skin on into big pieces ,chop the onion fine , Heat the oil in a wok and add the mustard and garlic when the mustard splutters add the onion and fry till translucent. Now add the ginger paste and fry for 2 minutes then add the rest of the ingredients with a cup of water and cook it on a medium heat covered for 20 minutes or when the pumpkin is cooked well. The water should almost dry up, Stir it twice in between. Serve it with rice.
